I’m kinda on blog-hiatus if you haven’t noticed. Sadly, my off-line life has been super busy with the ol’ day job. Hey, a girl’s gotta eat.
Also, HMPFMW is a wedding blog, obvi – and my wedding plans are well, nonexistent at the moment. Still no date, no place, no nothing. But once we gear up, I will definitely post more regularly. Promise.
So it’s winter. As in – I have a raging cold, wore Uggs and my winter coat today, and think I might have to turn the heat on tonight as our upstairs is frigid. It’s only October! What happened to fall? BS if you ask me.
Since this is supposed to be a wedding blog, here’s a warm fuzzy for you. Check it out – a wedding boutique owner in Florida is giving away wedding dresses to recently laid off brides-to-be. I love it.
In other news, some peeps must be just now stumbling upon my little old bloggy and a new crop of “Shame!” “How could you?!” “You’re tacky!” comments and emails have been appearing. Yawn.
In my wedding planning world, there is still no planning. Saving, though! 🙂

Yes, I’m alive. Barely. I feel like I’m always blah-blah-blah-ing about my long work hours, but that’s my excuse. Did you read Tweet My Wedding today? You should. I blog about how my Dad told me I “don’t have much time” if I want to have kids. Delightful, no?
You want a wedding update. Except I don’t have one. All that’s interesting to report is the fact that a wind/rain storm today blew down a tree nearby and most of it ended up in our backyard. Oh, and I’m going to NYC this weekend to rock out with my MOH and one of my BM’s. SO. EXCITED.
Oh, AND I’ve been forcing myself to RUN. Shockingly, I’m enjoying it once I get past the initial 7 minutes when I just want to stop and eat a piece of chocolate cake. Loving Desperate and Melrose. Ashlee is HORRIFIC, right? But I’m addicted to her bad acting and weird facial expressions.
To stay on the wagon, I’m going downstairs to shred.
So, those who follow me on Twitter (if you don’t, you need to) know that my Dad is on vay-cay this week and he came over for dinner tonight. As per usual, work was chaotic – I knew it would be, so started thinking of what to make at 8am this morning. Long story short, plans changed when the trout at the grocery store looked icky, so I made an exec decision on the fly.
Here’s what I made (I pulled this one out of nowhere and it was actually pretty tasty!):
ingredients: 1.5 pounds of wild sea scallops, three spoonfuls of “butter” (read: Calcium-enriched Country Crock), some white wine (I just poured), juice from one fresh lemon, breadcrumbs, some oregano (like… 5 shakes or so?), 1 can beef broth, brown rice, fresh veggies (I made broccoli and carrots).
1. line a baking pan with tin foil (easier cleaning later – you’ll thank me).
2. spray with the stuff that makes food not stick.
3. Oh – preheat over to 350 degrees.
4. grab a bowl and throw the scallops in there. shake around with bread crumbs so that the scallops are coated – then dump on foil-lined baking pan.
5. combine melted “butter” with wine and lemon juice. dump on top of the scallops.
6. bake scallops for, mmmmmmmmmmmm – 20 minutes.
7. boil the beef broth – cook brown rice in the broth rather than in water – WAY tastier.
8. prepare veggies.
9. THE END. serve scallops on top of rice with veggies on side.
30 minute meal and tres delish. Watch out, Rachael Ray. This made MORE than enough for my dad and me AND a plate for my fiance to eat when he gets home from work.
